Springworks Project (Working) Title: Economic Development and the Evolution of the Shopping Cart
Springworks Project Description: Explore the changes in food consumption as driven by economic development. Hypothesis is that there is a “boomerang” back to basics as countries become highly developed. Example is the emphasis on sourcing local and free range animals—methods and items that are readily available in undeveloped/developing countries.
